ABOUT THEEXPERIENCE

With a staff of five dadas (traditional Moroccan cooks), each with her own specialism, a consulting chef who has worked for Alain Ducasse, and a Moroccan cookbook author on the team, we are able to offer our guests instruction in the mysteries of Moroccan cuisine at any skill level. As we prepare everything we serve in our restaurants from scratch, there is a total commitment to fresh, seasonal cooking that comes through clearly in all that we do.

The participant will learn about spicing, the Moroccan flavour lexicon, the basic techniques underpinning any dish (eg. making couscous from scratch before assembling the final dish) so that they will not only be able to reproduce what they learned at home, but also be able to innovate on their own. We offer classes to suit all levels, from the novice to the advanced professional, and are delighted to design a bespoke class to suit your needs.

ABOUT THEMENU

Each cooking class includes a brief introduction to Moroccan cuisine, an overview of the techniques, ingredients, spices, and equipment appropriate for what is going to be prepared.

Participants are able to determine what it is they would like to learn (ie which dishes) within the constraints of the seasons and what is fresh and available in the market. A good starting point is the dishes that are on our daily-changing menus. The Dar Les Cigognes cookbook also provides many ideas.

Participants do often have their favourite dishes, something they have heard about, or something they ate somewhere, and want to learn how to do it. Also, while modern Moroccan cooking practices are changing to suit busier lives, we do encourage people to work from scratch as we do, using the traditional techniques...but if you want to learn how to cook “alla scapata” we can also do that. We are only too happy to oblige.

ABOUT THELOCATION

We host the classes in our historic riads in the ancient medina of Marrakech. Dar Les Cigognes is conveniently accessible by car/taxi, and is directly across the street from the Royal Palace, with the main entrance to the Badi Palace just around the corner. Additional major tourist sites reachable in under five minutes on foot are the Bahia Palace, Saadian Tombs, Dar Si Said museum, Bert Flint Museum, the Spice Souks, the Fresh Produce Market, The Place des Ferblantiers, and the old Jewish quarter, the Mellah.
