ABOUT THEEXPERIENCE

All the vegetables we serve or cook are coming directly from my vegetable garden and greenhouse. I never buy food at the supermarket and if I come home with a basket is because either I collect my veggies or I bought them from people who grow them by themselves in a synergic or permaculture way as I do.
We are also discovering not just the beauty but also the incredible taste of raw food, discovering how by mixing those flavours we can get a totally different rich flavour.

I am an MD and working for the National Health System, I know health comes mainly from what we eat or drink. Everytime you eat or drink you are either feeding disease or fighting it. So following what Hippocrates says — 'Let food be your medicine and medicine be your food.'

ABOUT THEMENU

We (quite) never use recipes. We create dishes, playing with the colours of fruit ( even in the winter we have kaki, pomegranate, feijoia, walnuts, almonds, hazelnuts, and vegetables that the Nature give us in that moment, as we only eat seasonal food. We are part of an assosiation called G.A.S. (Gruppo Aquisto Solidale) wich is basically organic fruit grown in Sicily directly from producer to consumer.

ABOUT THELOCATION

Orte is the bellybutton of middle Italy…
It is the real country, still so authentic with great and wonderful places to discover: Villa Lante (Bagnaia) etruscan pyramid (Bomarzo) Civita di Bagnoregio, Tuscania…Amelia, MonteCesi, Marmore Waterfalls.
