ABOUT THEEXPERIENCE

As you all know, a typical Italian dish you find in a traditional Italian kitchen is pasta.
Above all, home made pasta, in all its various forms - fettuccine, ravioli, gnocchi, lasagna, cannelloni, orecchiette, strozzapreti, fusilli, cavatelli, pici - is true to the authentic Italian cuisine! This cooking class in Rome will teach you the right cooking techniques to make your own Italian home made pasta. After our pasta making class, you will definitely be able to surprise your friends with new skills and delicious meals!

As a guest, you will prepare your meal guided by my help, after which we will experience our “masterpieces” together during a lovely, friendly dinner. Our pasta making class is all about having a good time, while learning about food and dining in Rome, and relaxing over a friendly meal with good conversation!

It is possible to customize the lesson asking me some changes.

It is also possible to plan a classic three course menu, with a first course, a main course (meat-based) and a dessert, for the same price or preparing two pastas and a dessert.

When eating in Rome, a dinner is not complete without a bottle of wine! As such, a simple wine will be served during the dinner. For special wines, it is possible to discuss it in advance.

Spring/Fall/Winter
Morning session starts at 10 am to have lunch at 1 pm
Evening session starts at 5 pm to have dinner at 8 pm

From 1st June to 1st September
Just one session: evening session starts at 7 pm to have dinner at 10 pm

Menu 1 (3 kinds of Pasta)

Fettucine al ragù (meat based tomato sauce) or
Fettuccine Alfredo's style or
Pici all’aglione (garlic based tomato sauce) or
Orecchiette alle cime di rapa (with broccoli) or
Tagliolini al limone (lemon based cream sauce) or
Tonnarelli alla carbonara (pork cheek, eggs and pecorino cheese) or
Tonnarelli all’amatriciana (pork cheek, tomato and pecorino cheese) or
Tonnarelli cacio e pepe (pecorino cheese and pepper) or
Strozzapreti al gorgonzola e noci (gorgonzola cheese and wallnuts) or
Cavatelli al sugo di salsiccia (sausage and tomato sauce) or
Cavatelli all'arrabbiata ( garlic, chili and tomato sauce) or
Busiate al pesto di Trapani (hand made pasta with basil, almonds, tomatoes, garlic, pecorino cheese)
Ravioli ricotta e spinaci al burro e parmigiano (filled with ricotta cheese and spinaches and cooked with butter and parmigiano) or
Cappellacci di ricotta e patate al burro e parmigiano (filled with ricotta, potato, onion and cooked with butter and parmigiano) or
Tortelli con ricotta, melanzane fritte al pomodoro (ricotta and fried eggplants) prepared with tomato sauce or
Ravioli alla Scapece con ricotta, zucchine fritte, menta, pecorino preparate con salsa alle zucchine (ricotta, fried zucchini, mint, pecorino cheese and prepared with a onion and zucchini cream).
Gnocchi di patate al gorgonzola e noci (gorgonzola cheese and walnuts ) or
Gnocchi with pesto sauce (garlic, basil , pecorino and pinenuts) or
Gnocchi alla sorrentina (onion,basil based tomato sauce and mozzarella) or
Gnocchi alla romana (semolino gnocchi with butter and parmigiano) or
Lasagna bolognese classica (meat based tomato sauce parmigiano and besciamel) or
Lasagna al pesto e ricotta (pesto, ricotta and pinenuts)
Cannelloni ricotta e spinaci al pomodoro e besciamella o( pasta rolls stuffed with spinaches and ricotta in a onion and basil tomato sauce and besciamel) or
Cannelloni ricotta e spinaci con besciamella e crema al tartufo ( pasta rolls stuffed with spinaches and ricotta in besciamel and truffle cream)

Menu 2 (3 courses menu)
Pasta (to be agreed with the guest and to be chosen among my proposals)

Polpette al sugo (meat balls with tomato sauce) or
Trippa alla romana (tripe with vegetables tomato sauce, pecorino cheese) or
Saltimbocca alla romana (veal slices with ham and sage) or
Petto di pollo alla mugnaia (chiken chest with flour, butter and sage) or
Filetto di maiale al latte e ai 3 pepi (pork fillet with milk and three peppers)

Classic Tiramisu or
Millefoglie con crema e frutti di bosco (puff pastry with custard and wood berries) or
Millefoglie al cioccolato (puff pastry with cocoa custard and chocolate pieces) or
Crepes alla Nutella or
Semifreddo al cioccolato (chocolate parfait) or
Semifreddo al pistacchio (pistachio parfait) or
Semifreddo alle nocciole (hazelnuts parfait) or
Semifreddo alle fragole (strawberries parfait) or
Panna cotta al cioccolato (chocolate cooked milk cream)
Panna cotta alla frutta ( fruit cooked milk cream)

Menu 3 (2 pastas and a dessert)
Two pastas to be chosen among my pasta proposals and a dessert to be chosen among my dessert proposals.

ABOUT THELOCATION

My house is very comfortable, modern, and welcoming.
You will enjoy this meal in Rome in a 50 square meter cosy room, which combines the kitchen, the living room and dining room all at once. Shaped as such, the place, allows my guests to interact easily.

My place is very close to Vatican City and Prati quarter (50 meters from metro A, Cornelia stop). So it's also very easy to reach!
The quarter is very commercial and full of life - perfect to go shopping or to have a coffee before our event :)

We had a fabulous evening cooking Italian food with Francesca. We definitely recommend an evening of cooking as a great Roman experience! We made gnocchi with a ragu sauce, pork, and tiramisu. It was all delicious. We choose to do the 3 course meal because we wanted a nice dinner experience and that is what we received. However, looking back on the experience, we would have preferred to make the 3 kinds of pasta instead. This is because the pork and tiramisu, although new to us, did not seem that difficult to make by just following a recipe from google. Whereas, the pasta needs instruction and cannot be made simply by just googling a recipe. Thanks for the wonderful evening Francesca!

We had a great food experience with Magic Francesca making different types of pasta, including a ravioli. My husband and teenage son, who do very little cooking, enjoyed the afternoon, and my son said it was the highlight of the trip for him. Francesca made sure everyone was comfortable and participating. She definitely knows her stuff; we tried lemon pasta in two different restaurants in Sorrento, and we all agreed they were not as not as good as the one we made with Francesca!
