ABOUT THEEXPERIENCE

Food is an alternative and delicious way to learn about a country’s culture and history, especially Italy’s. Join us at our home for a fun-filled cooking lesson that will teach you how to expertly prepare pasta from scratch and the authentic recipe for Italy’s favorite dessert, tiramisù. Other dessert options are also available.
You’ll also hear about the origins of each dish and personal tips and tricks to cooking authentic Italian cuisine. Your hard work will be rewarded when you sit down to your very own home-cooked meal with a good bottle of wine. Buon appetito!

The recipes you prepare in class will be sent to you via email, so you can try them on your own back home.

ABOUT THEMENU

Homemade pasta with a choice of 1 of the following sauces:
1) all'amatriciana: pork belly, pecorino (sheep milk cheese), tomatoes, bell pepper
2) alla crema di peperone e ricotta: bell pepper and ricotta sauce
3) al ragu - minced meat, red wine, tomato sauce
4) alla sorrentina - tomato sauce, mozzarella, basil
5) alla norma - eggplant, seasoned ricotta, basil, tomato sauce
6) al pesto - basil, pine nuts, pecorino (sheep milk cheese), garlic
7) ai fagioli - tomato, bean and pork sauce

AUTUMN & WINTER SPECIALS (please check with us for availability):
8) alla zucca - sweet and creamy pumpkin
9) alla crema e salsiccia - pumpkin and Italian sausage
10) alla gorgonzola e noci - walnut and blue cheese
11) al radicchio rosso - red chicory and cheese sauce
12) con funghi, castagne e salsiccia - mushrooms, chestnuts and Italian sausage

SPRING 2019
13) crema di carciofi e speck - artichoke and smoked, cured pork
14) crema di zucchine e limone - with zucchini and lemon cream (optional: seafood with choice of shrimp and salmon)
15) crema di noci e ricotta - walnut and ricotta cream (optional: with pancetta/pork belly)
16) crema di broccoli e noci - broccoli, walnut and goat cheese sauce
17) crema di pistacchi e menta - pistacchio and mint sauce

Dessert:
1) Tiramisù classico: -Traditional recipe with pasteurized eggs, savoiardi, mascarpone, coffee, cocoa
2) Dolce tricolore - amaretti, pistachio liquor, sweetened ricotta, seasonal fresh fruit or fruit compote (eg. Peaches)
3) Limonisu - lemon tiramisu consisting of savoiardi, lemon-mascarpone cream
4) Dolce al torrone - chilled, layered dessert of savoiardi and torrone cream (contains dairy and almonds; can be made eggless on request)
5) Torta "Black Magic" - olive oil, mascarpone and dark chocolate dessert, bakes itself into 3 layers with a mousse-like center
6) Castagnaccio - gluten-free chestnut, rosemary and raisin cake (Choice of with or without lemon-ricotta topping)
7) Torta di riso - Sweet rice cake, baked
8) Torta Caprese al limone - Almond flour lemon cake, with or without white chocolate (your choice!)
9) Crostata di castagne e nocciole con crema alla ricotta - Tart base of chestnut flour and hazelnuts, with a creamy ricotta filling
10) Crostata o Crostatine con le Visciole - A Jewish-Roman tradition; ricotta and morello cherry tart, made as 1 whole or individual mini versions, depending on the group size
11) Mousse di Fragole con Amaretti - Strawberry mousse served with crunchy amaretti cookies

Nadia and Matteo are amazing cooks and people! As three American college students we do not know too much about Italian cooking so it was exciting for us to see how they worked in the kitchen. They shared cooking tips, their favorite ingredients to buy, and Matteo's family recipe for a red tomato sauce. We home made gnocchi and strawberry tiramisu. We had fun listening to their stories of Rome and asked them plenty of questions about the city and Italian life.
