Every region has their version; the Carolinas with their pork and vinegar-based sauces; Texas with their beef and sweet, sticky sauces and Kansas city is doing a mixture of the two plus their signature ribs... BBQ is THE unofficial but official cuisine of the States. Come and try this expat Chicagoan's version made with pork braised slowly in spices and sauces until it literally melts apart. My version is served on sweet corn arepas instead of the traditional bun and topped with quick pickled red onions and bright cilantro. It is messy but it is delicious! And that's napkins are for!
