ABOUT THEEXPERIENCE

The dining experience is straightforward and simple. I provide an entree and two vegetable side dishes according to the season of the year. The menu features bold flavours from across the north atlantic into the mediterranean through the bosphorous into the black sea and overland through iran, afghanistan into india ending near Burma. traditional recipies featuring clever combinations of seasonal vegetables, fresh herbs and spices creating harmonious naturally pleasing tastes. All meat and most dairy and vegetabes are free range/organic from local farms. We have chairs and an attractive dinner table. We also have an elegant living room with antique furniture from beirut, lebanon, including two couches. I will serve you and bring out whatever food mosts interests you. We can chat while you eat. You will learn new things about the area from a local perspective from myself, someone who has been a lifelong resident.

Maryland Crab Soup
With a 1/2 lb of local crab meat, carrots, potatoes, green beans, celery, corn, old bay seasoning, worcestershire sauce, mustard, fresh tomatoes and more. One of the best soups ever invented. This is far more delicate, rich in taste and superior to any other maryland crab soup you will find.

Bean and Pea Salad with Fennel (Scafata)
With red onion, pancetta (bacon), frozen/fresh fava (or lima beans), fennel bulb, potatoes, cherry tomatoes, fresh marjoram, green peas and olive oil.

(Organic) Chicken Cutlet with Marinated Mushrooms over Arugula
With cippoline onions, white balsamic vinegar, whole allspice berries, fennel seeds, rosemary, tarragon, sugar and more.

Pork Loin Stuffed with Figs and Brandy (Lomo de Cerdo Relleno)
With Figs, brandy, rosemary, parsley, carrot, onion, parsley and homemade bread. Served with sherry sauce and rice.

18th c. Colonial Irish Stew
With lamb, lamb bones, turnips, carrots, potatoes, thyme, parsley and whole grain unhulled barley. The pure taste of lamb shines through a simple but strong vegetable herbal flavour. By request this may be made with beef instead of lamb.

ABOUT THELOCATION

Oakton is census designated place south of Vienna, Va. Between the 1970's and 1980's it was developed with homes for business and government employees. The neighborhood is safe and friendly. It is full of trees and natural beauty. It is conveniently located next to the Flint Hill School, four miles south of the Nutley St metro station in Vienna, VA.
