IMPORTANT UPDATE: I'm currently on maternity leave, having given birth to my second child in May. For this reason, bookings are currently blocked until the 31st December 2019. For childcare reasons, I won't be able to offer the full-day cooking experience that is Market-To-Table until June 2020 either. Guests visiting Turin between January and May are strongly encouraged to take one of my shorter Pasta-Making Classes instead. Also, do look out for new cooking experiences I'll be launching in early 2020!
ABOUT THE EXPERIENCE:
The market-to-table cooking classes are for designed for 2-6 participants and are held in my home kitchen 4 km west of Turin's city centre. Here's an outline of a typical day with me:
-8.45am – 9.00am: Meet at Pasticceria/Bar Alicino, my local cafè/pastisserie for a cappuccino and pastry, a typically Italian breakfast.
-9.00am – 9.45am: Local neighbourhood market, butcher and wine shop visit to buy the ingredients necessary for the day's lesson/meal. We will buy seasonal fruit and vegetables from growers/producers from the surrounding countryside, meat from my macellaio di fiducia ('trusted butcher') and wine from a sommelier who stocks quality Piedmontese labels.
-9.45am – 12.45pm: Hands on cooking lesson in which we will prepare the appetiser, starter, main and dessert for lunch. A morning tea or an aperitivo can also be prepared if you've already worked up an appetite!
-1:00pm – 3.00pm: Time to enjoy the food we've made together! Buon appetito!
-local market, butcher and wine shop visit
-use of a cooking apron
-hands-on cooking lesson
-the cost of a four course meal, plus wine, coffee and digestif)
N.B.: Please note that this experience is NOT AVAILABLE on Sundays and Mondays, as the market is closed on Sunday and, on Monday, the small businesses I work with, namely my local butcher and wine shop, are closed. Should you wish to book a cooking experience on these days, I recommend doing my three hour pasta making class instead.
My home is easily accessible via Turin's underground (metropolitana) train system. Closest metro station is Massaua (a 15 minute ride from Porta Nuova and 10 minutes from Porta Susa). Our meeting point (Pasticceria/Bar Alicino), my local market, butcher and wine shop are all located within walking distance of Massaua station.
My daughter and I had the pleasure of meeting up with Rosemary in Turin for a delightful visit to local markets and a cooking class in her home. She worked out a delicious menu based on our requests. We enjoyed learning to make fresh pasta and other dishes and look forward to making the recipes in our own homes. Rosemary is a great hands on teacher: full of patience, stories to share, encouragement and warm smiles. Time spent with her greatly added to our understanding and appreciation of the local culture and foods of the region.
The experience was great! Rosemarie is really nice and procise in the ingredients, the menu and the atmosphere. The food was great and it was by our demand and with full patience from Rosemarie. I really recommend this experience to discover a bit more about Italian cooking and to see Turin from a different point of view! Thank you!
Ciao Rosemarie. Grazie mille per la tua lezione. Sono molto contentissima d'imparare la cuccina italiana con te. I tutti piatti erano molti buoni e Rosemarie e' molto simpatica. Grazie mille ancora!!!!
Our day with Rosemarie was AMAZING! Sadly we had some weather issues and we were 30 minutes late, but we still had enough time to get a great cup of coffee along with an incredible pastry. Although we expected a huge market, due to the weather, many of the stands were not open but we still got all the needed ingredients. Afterwards, we went to buy some meat and wine in small, authentic, local shops, where we got to learn some more about the meat used in the Italian kitchen and even taste some chocolate. After the grocerry shopping we went to Rosemarie's kitchen, and started to cook together. We had a full 4 course meal which was both delicious and fun to cook. Rosemarie was so nice and answered every question with a smile. We got many tips for cooking! This experience was great and very recommended!
I am an expat living in Italy and booked Rosemarie's market-to-table class while my mom visited. We thoroughly enjoyed spending the day with Rosemarie learning how to make traditional piedmontese cuisine! Rosemarie worked with us ahead of time to tailor the menu to fit our taste and dietary preferences. She was patient and willing to answer any and all questions related to living in Turin and navigating the mercato. The mercato she favors was new to me and offered so many wonderful options for produce, meats and fish. Rosemarie holds the class in her home which made it an unique and comfortable learning experience. The class was very hands-on so we definitely had an authentic learning experience. We learned new techniques, ways to adjust the recipes to fit our preferences and time constraints. It was so fun and the food we made was delicious! Our menu: Antipasto: Vitello Tonnato, Primo: Tarjarin con Ragu di Salsiccia, Secondo: Merluzzo con Porri, and Dolce: Panna Cotta con Melograno Coulis. I now have my own pasta maker - same one as Rosemarie's (thanks, Mom)! And can't wait to practice what I have learned.
As a mother of 2 boys i find myself forever in the kitchen looking for new tasty ideas the whole family will love. Rosemaire’s market to table cooking class gave me new ideas and recipes. Shopping at the markets was a totally different experience having a knowledgeable chef explaining the different offering and showing us what to choose. I enjoyed visiting the charming Enoteca choosing the wine to match the seasonal menu. Back and in the kitchen the cooking part was informative and fun. I won’t forget Rosemaire’s tip on slicing and dicing and how to remove the seeds from a pomegranate without making a mess. The food was DELICIOUS and it was wonderful to learn more about the Piemonte culture through the cooking. I highly recommend this fun way to understand local food and culture. Thank you Rosemaire
I took Rosemarie's market-to-table cooking class with a friend in July and it was fabulous. We started off at the markets, collecting our ingredients, learning about the produce that was in season at the time, and meeting the growers she buys everything from. We then went to pick up some wine at the local enoteca, and came back to her apartment to cook everything, then sit down and eat lunch together. There was more than enough food! What I really loved was that we were able to learn how to make the dishes in a real Italian home, and shop where Italian locals do their groceries - the recipes were quite simple and approachable, and everything tasted incredible (we learnt to make peperonata, tagliolini al limone, rabbit with white wine sauce and vanilla panna cotta). I've been making them a lot myself since the class! My friend who I attended with is allergic to seafood, and it was no issue to take this into account when Rosemarie was designing the menu. If you love food, want to learn about Italian regional cooking and have half a day available when visiting Turin, I absolutely recommend booking into this relaxed, informative and delicious experience!
A friend and I took a Market to Table Italian cooking class with Rosemarie (Turin Mamma) in July and thoroughly enjoyed it. The experience of going to the neighbourhood market in the morning to buy fresh ingredients, and then consult the enoteca about wine pairings really gave me an insight into how Italians plan and prepare their delicious meals. I was also able to experience the whole Italian “feast” style meal – with an antipasto, primo, secondo, dolce (dessert), and digestivi (liquors that Italians drink after meals to support digestion). We learnt useful dishes that not only tasted great on the day, but could work as other courses, sauces or salads and are really easy to recreate at home. My favourite part of the class was making the pasta from scratch (which I have done a few times at home myself now!). Rosemarie is a fantastic teacher. She is very patient with her students, and has a wealth of knowledge about the different regional cooking techniques, dishes, and produce seasonality. Rosemarie was very accommodating to my dietary requirements (allergy to seafood) and I understand that she is happy and able to accommodate most dietary needs – although it would be worth discussing this with Rosemarie in advance. I would highly recommend that anyone visiting Torino takes a Market to Table Cooking Class with Rosemarie because it is a great way to experience Italian food culture and learn a few great kitchen tricks! As far as I am aware, there are no other similar opportunities, and with Torino being such a “foodie” destination, it would be a real shame to miss out on this! For the record, we had: - Antipasto: Peperonata - Primo: tagliolini (thin, spaghetti-like pasta) with a summery lemon sauce - Secondo: Rabbit in white wine sauce - Dessert: Panna cotta - Digestivi: Grappa/Limoncello/Grappa al Mirtillo/Caffe - we didn't make these, but did enjoy tasting them!
