ABOUT THEEXPERIENCE

Hands-on cooking lessons are held at my eighteenth century Tuscan house. The ancient building was a pottery factory dated about 1700, where ceramics were produced for many years. The building has been recently restored maintaining its Tuscan style and converted into house.
Lessons are held in the large kitchen perfectly organized, that can welcome up to 8 guests.
I take care of all the ingredients needed and as a guest, you will just learn to prepare memorable dishes in the Tuscan tradition!
Lessons start from 10 am lasting about 5 hours preparing a four courses meal that we will taste at the end!

The home grown vegetable garden gives most of the ingredients to prepare the famous bread soup (Ribollita), tomato soup (Pappa al Pomodoro) and other dishes in the Florentine tradition.

Menu vary according to the season and your needs. I will use only the freshest ingredients available.

ABOUT THEMENU

A sample menu:

Cicken liver canapes or vegetable bruschetta from the garden or savory puff pastry with pecorino cheese and vegetables;
Ravioli with ricotta and spinach stuffing or tagliatelle or gnocchi;
Chicken cacciatora style (stuffed chicken with tomato and olives) or viel rolls in the skewer with sage and vegetables;
Tiramisù cake or zuccotto cake (cardinal hat semifreddo made with spongecake and white/chocolate whipped cream)

The menu vary according to the season.
Children and people with special dietary needs, such as gluten free and vegan, are most welcomed. (I'm qualified chef at the Italian Celiac Association in Florence).

ABOUT THELOCATION

If you would like to take the opportunity to take a cooking lesson in a traditional, old Tuscan pottery factory, I'll be happy to welcome you at home.
The house, is about 15 km west from Florence, in a village called Lastra a Signa, well connected to Florence and can be easily reached by car or bus. Several trains stop at the local station hourly, and I'll be happy to organize your transfer to me on request.
The house is very close to the ancient medicean hunting estate of Artimino and opposite to the famous Villa with its great vineyards and Carmignano wines.

My garden offers some of the most appreciated vegetables in the tuscan cooking, such as black cabbage, swisschard, spinach, tomatoes, cucumbers, eggplants, zucchini with an incredible real taste.
I'd love to share with you these uncomparable tastes!

The cooking lesson with bars are was great! She's so friendly, incouraging, generous and we had so much fun! The food was so delicious and her garden with fresh vegetables and herbs is perfect. Her English is very good. We spent the whole day at her house cooking and eating until we rolled out of there!

This was the best cooking class I have ever taken. Chef Barbara is amazing. She tends to every detail of the cooking process, and creates incredible authentic Italian cuisine. She welcomes you into her home and shares her extensive knowledge while providing patient instruction. The entire experience made my trip to Italy perfect. I would recommend Salvia & Ramerino to anyone wanting to indulge in the Italian lifestyle and cuisine. Geri Piper

In 2013, my wife Nancy and I enjoyed a great evening with Barb in Tuscany. Cooked fresh ravioli, tiramisu and had a wonderful dinner with friends Gayle Arnold and Glenn Leeland. Barb was charming and had a wonderful touch in the kitchen. We WILL visit again if we return to Tuscany. Delicious food.
