My mother is an amazing cook and prepares everything from scratch, so I was eating delicious homestyle food every day. But we also spent much of our time as a family traveling around Catalonia to try different restaurants – and in our family, it was first pick a restaurant we wanted to try, and then (and only then) find out what else you can do in the area where it was located. When I grew up I moved to New York City where I worked for 15 years as a graphic designer in the fashion industry. But as I started cooking more and more on my own, I decided that what I really wanted to do was cook. I decided to complete culinary school at the Natural Gourmet Institute in New York, where I received a health-supportive culinary education. After some time working at Gramercy Tavern, and then as a personal chef business, and finally as a cooking instructor, I decided I wanted to teach the food from my home region of Catalonia. My family and I moved to Barcelona, we built a big teaching kitchen in our apartment, and I worked with my mother and other family chefs to learn those delicious meals that I ate growing up. I also wanted to bring my nutrition-based culinary training to these dishes. So I have adapted those recipes to people with gluten and dairy sensitivity, without compromising the flavor and authenticity. And I have also developed a delicious vegetarian Catalan class. Now I want to share with you my favorite dishes. They are dishes from my mother and my grandmother and from other grandmothers in Catalonia, and from friends and from restaurants, fishmongers. So please join me and let’s all cook these delicious meals together – a la taula!

My partner and I had the most wonderful time taking this cooking class with Nuria! It was the highlight of our trip to BCN. Nuria is a NYC trained chef with robust knowledge of healthy and nutritious cuisine, in addition to traditional Spanish and Catalan food culture. She was able to easily accommodate our request of a menu that was completely vegan AND gluten free. Her communication was timely and professional. Seriously cannot recommend this experience enough for anybody looking for an authentic cooking experience during their stay in Barcelona.

We had the most wonderful morning and afternoon with Nuria. We first met her at the local market for a market tour, where she showed us all the local offerings of produce, cheese, and meats (we skipped the meats as we are vegetarian). She introduced us to an incredible olive and saffron seller, who educated us on all the intricacies of olive varietals and saffron preparation, and all the different factors that can affect their flavors. We then went on to the amazing cooking class at Nuria's home...she had prepared so much in advance for us, having cut a lot of the vegetables, and laid out all the utensils and bowls we'd need beforehand. Plus, there was a never ending plate of cheeses and olives for us to munch on while preparing our meal...plus wine of course! Nuria is really able to meet you wherever you are with your comfort in the kitchen, but she is incredibly knowledgeable about local foods - one of the things that struck us most during our visit to Spain in general is how aware people are of where their food came from, and why it tastes a certain way because of where it's grown. In the US, we value "local and organic", but we still don't seem to pay much attention to why a certain vegetable tastes a certain way because of the specific region where it was grown...in Spain, they do. We are fairly experienced cooks and there was still so much to learn from Nuria. We are vegetarian and Nuria helped us prepare one of the most incredible feasts we have ever eaten. Her paella was exquisite and thoughtfully prepared, we had a number of amazing vegetable sides, plus the best salad we have ever had. Lunch ended with an incredible carob almond cake dessert, and then we lingered over wine and talked. It really felt like we spent an afternoon cooking and enjoying time with a dear friend. She is very easygoing, family-friendly and fun to talk to...we learned a lot about the history of Catalonia, chatted about real estate in Barcelona (her home is truly beautiful), and other random topics throughout the afternoon. We were somewhat skeptical of the value of the class at first, as in the past in other places I have found cooking classes to often be too basic, especially relative to the price. However, Nuria was able to teach a really detailed class, though I am sure she would also be able to provide a wonderful experience for someone who is more unfamiliar in the kitchen. All her ingredients were local and organic and her philosophy around food is also something she shares. You get what you pay for, and after taking Nuria's class, not only do we feel it was a good value, but Nuria clearly puts a lot of attention to detail and thoughtfulness into her class, and that level of effort is not easy to pull off! The cooking class was the highlight of our time in Barcelona and in Spain altogether. We can't recommend Nuria highly enough!

Nuria was an absolutely terrific host. She had everything prepared upon our arrival and even had specific tasks in mind that were appropriate for our children (ages 3, 6, and 8). The recipes turned out amazing and we all enjoyed great, easy going conversation with her during the meal preparation and also during and after dinner as well. Nuria made sure the children were comfortable and even had toys set out ready for the kids to play with once they lost steam cooking. Our daughter has Celiac disease and not only was Nuria completely prepared for this but also showed a genuine concern and understanding with making sure we were comfortable with all of the ingredients and preparation procedures to ensure no cross contamination with gluten. The cooking space was roomy, architecturally beautiful, and spotless. Our group of 7 thoroughly enjoyed ourselves and would recommend Nuria and this experience to anyone!

We so enjoyed cooking and dining with Núria in her fabulous apartment which she & her husband renovated for cooking and entertaining. She was very personable and flexible, yet also organized and well prepared for our afternoon of cooking. It is clear she has a passion for the freshest ingredients and has grown up in the Catalan culture with the cooking methods of her grandmother. She has also lived in NYC, so knows about ingredients in the US. In addition to cooking a great meat & fish paella with the freshest ingredients, we learned to make romesco sauce for a very special salad and a wonderful tapas dish with chic peas & wild mushrooms. Núria has excellent knowledge of nutrition and taught us about thickening agents that can be more digestible than some we traditionally used as we worked on dessert. It's clear she enjoys cooking and teaching others. So glad we did this. It was both education and FUN!
