I cook vegan and vegetarian food. I like traditional, I like exotic, I like creative. I do not like fusion! For me food is about expressing culture, human inventiveness and the generous beauty of nature. Before becoming a qualified cook I lived, worked and graduated in London. In 2011 I decided to take my cooking ardours seriously and enrolled in a cooking school gaining a commis chef diploma, a HACCP certificate and the membership with Federazione Italiana Cuochi. Once the “Tu Chef” course was over, I started a three months internship at the Michelin starred restaurant “Giuda ballerino”. During these three months, both exhilarating and exhausting, I was lucky enough to join the chef and his team in Cannes, where we were the official Italian catering during the Festival. Since giving up both eating and cooking meat and fish in 2012, my culinary research took a different direction. My latest courses were on vegan haute cuisine and were held at Joia, the first and only Michelin starred vegetarian restaurant in Europe so far. Now I run my little catering and personal chef business, which unfortunately is not my "proper" job. Yet! I love entertaining and amusing my guests, surprising the curious ones and comforting the traditionalists. And vice versa!

Ileana is an amazing cook! We compared this to our dining experience at Finger Lakes Table (FLX table) in new York that won the best new restaurant in America in 2016. We were stuffed after the 5 course meal (go hungry)! Every dish was simple and delicious made with ingredients from the local market or Ileana's garden! Illeana herself is very friendly and fun. It was great talking to a local about Rome, Italy and her travels (she's been almost everywhere)! Best veggie food in Rome and best host to boot!

Creativity, passion, natural flavours, good company: that's what I call a special dinner! My husband, our baby girl and I spent a very pleasant night with Ileana and her friends and we were delighted by her vegetarian dishes. A week has passed and we are still talking about that wonderful cream of pumpkin,potatoes,mushrooms and radicchio, the orange scented saffron risotto with almond butter and the exquisite chickpea flans with tomato and rosemary sauce, to name but a few. The memory makes me drool! Thank you Ileana, see you soon.

Last week I had the pleasure to have a fantastic dinner with the specialties of chef Ileana! We were very surprised by the striking ingredient combination of the dishes on the menu. The saffron risotto with almond butter and orange zest was amazing, the peas and ginger starter was truly flavourful and delicious and the second course too. We ended the meal with a simple and lovely fruit based dessert. Excellent Italian cooking, I’d love to eat here again.

I personally know Ileana since at least twenty years and in a sort of way I saw her passion for food rising and growing day after day, fostered by her curiosity and determination. After putting Ileana’s cooking skills several times on probation, I was astonished by her ability to both reproduce traditional tastes and be imaginative when the situation/event requires it. Quality and freshness play a primary role in Ileana’s cooking and the ingredients are carefully selected (together with their provenience). I once had the chance to cook with her and I learned several ways to cook the same food and still obtain different tastes from it - thanks for the tips! I can only advise to try Ileana’s cooking out and let you be surprised by the intensity and the exoticism of her creations. Joy through food!
