Roman food has its roots in ancient Roman traditions and is based on heavy use of inexpensive cuts of meats of veal and lamb, fresh vegetables - cooked in deep fried methods, and the use of the region's famous, and flavoured Pecorino cheese. Pasta is a staple in Rome - where it is served with less focus on red sauces, and more with sauces of butter, olive oil, and cheese!
The farmlands in the region of Lazio are some of Italy’s finest with extremely fertile soil producing quality vegetables, whose flavours contribute to the simplicity of Roman cuisine. With such flavorful ingredients, Rome's mantra is to keep things as simple as possible. The pasta sauces demonstrate the simplicity of Roman cuisine.
Our chef will prepare traditional Roman cuisine, explaining to you where each of the dishes came from, the story behind it as well as modern interpretations of it.
