ABOUT THEEXPERIENCE

Cooking is an art, and every time we organize a cooking class we have our one-and-only official teacher/artist to do this: zia (aunt) Carmen. We love the idea that she is teaching how to cook in the same place in which she learnt to do it when she was a kid, since she actually was born and lived her childhood in the apartment in which we live now. It’s a homemade version of the circle-of-life, isn’t it?!

While the broth cooks and fills the air with its wonderful, thick and heart-warming smell, the big wooden board becomes the centre of the action: 6 local, free-range eggs and a well of flour become a yellow, swollen ball of pasta dough. Working it with the rolling pin makes the pasta layers rough so that the broth will retain enough grip on them, adding flavour over flavour.
We learn directly from zia Carmen’s hands how to use the rolling pin (which is not, or not only, for chasing spiteful kids as our gradma’s were probably doing back in the day!), make the pasta layers thin enough and most of all fold the tortellini themselves!

ABOUT THEMENU

We are going to eat everything we prepare: tortellini with broth, and the broth meat with some homemade sauce.

ABOUT THELOCATION

Our house is located in Formigine, a small town in Modena's countryside. The class and meal are going to take place in our openspace kitchen.
