ABOUT THEEXPERIENCE

I grew up with my grandparents in a small city in western part of India. When i was young my grandmother used a variety of grains in her day to day cooking like Millet, Sorghum, Buckwheat, oats, Ragi, Farro etc. As i grew up i realised that the grains gradually vanished from our food. Having lived outside India for a very long time, we had almost forgotten about the super grains until i revived them in our food for my daughter. These humble grains have an amazing ratio of Carbohydrates : Protein : Fibre, not to mention loads of vitamins and minerals. These grains can be used in form of flours to make savoury or sweet dishes. I know we are talking about grains but i have to mention my favourite Chickpea flour which comes from chickpeas as in pulses. Chickpea flour is a unique flour, in that the nutritional benefits, versatility, taste, and texture it lends to gluten-free cooking is rare when compared to other flours.
I am a Mechanical engineer by profession and have worked in India, US & Singapore for over 12 years and i love to explore food. I realise people restrict themselves to a few known type of flours only. It is so simple to assimilate the super grain flours in our day to day cooking. I
want to share my experience of cooking with these super grain flours for general well being in our day to day lives.

The menu that i have planned for would require 2 to 2.5 hours of cooking and later enjoying it together with a good Indian wine. I will provide you with a list of brands of the ingredients that are easily available in most of the super markets and printed recipes with pictures for your ease of cooking.
As my experience goes i have conducted group classes at cooking studios, sharing delightful indian recipes and hosted dinners and lunches for friends and their friends.

Super Meal 1
Appetiser : Ragi pancake with coconut chutney

Main course : Chickpea flour based curry with choice of veggies (cauliflower, peas, drumsticks, potato, egg plant..) with Multigrain rice &
Stir-fried Lotus root with Super grain flour puffed bread
Spicy Yogurt with mango chunks as an accompaniment

Dessert: Cardamom flavoured Farro with cashews and raisins

Appetizer : Chickpeas, oats and sesame mini burgers

Main course : Creamy Kale and Spinach gravy with sautéed cubes of ricotta cheese with Multigrain rice &
Stir-fried spicy okra with super grain flour puffed bread
Spicy Yogurt with pomegranate as an accompaniment

Dessert: Sweet Ragi Balls with almonds and raisins and blueberry compote

Surrounded by three beautiful nature parks (Bukit Timah Nature Reserve, Dairy Farm Park & Bukit Batok Nature Park), our condominium (Glendale Park) has picturesque views of the foliage. A perfect place to spend your weekend mornings jogging, hiking or cycling in the nature park followed by a sumptuous brunch or spending quiet evening walks with family after an early dinner.

Glendale Park is 3 mins walking distance from the HillView MRT which is on the Downtown line (Blue Line).
